  • 4oz of the chocolate bar of your choice (60% min), chopped up
  • 1/2 ts cornstarch
  • 1 tb honey (depending on darkness of chocolate)

  • 1/2 tb honey

  • 6oz of the chocolate bar of your choice (60% min), chopped up
  • 3/4 ts cornstarch
  • 1 1/2 tb honey
  • sea salt to taste
1. Heat milk in a saucepan over medium high heat, stirring occasionally, until steaming
2. Create a cornstarch slurry in a small bowl or cup using 1 part cornstarch, 1 part steamed milk from the saucepan. Set aside.
3. Add chopped chocolate and stir until melted, lifting up from burner as necessary to keep the mixture from overheating
4. When chocolate is fully melted, add cornstarch slurry and mix, heating gently, until mixture begins to thicken. Take off heat and add salt or honey to taste. The mixture will continue to thicken a bit after cooling off.

Serve with whipped cream if desired.
